
{"id":3941,"date":"2017-11-07T11:32:14","date_gmt":"2017-11-07T11:32:14","guid":{"rendered":"http:\/\/www.romeeatfoodtours.com\/?p=3941"},"modified":"2017-11-07T11:32:14","modified_gmt":"2017-11-07T11:32:14","slug":"artichokes-alla-giudia","status":"publish","type":"post","link":"https:\/\/www.romeeatfoodexperience.com\/it\/artichokes-alla-giudia\/","title":{"rendered":"Carciofi alla giudia"},"content":{"rendered":"<p>&#8220;<strong>Giudia<\/strong>&quot;In dialetto romano significa&quot; <strong>alla maniera ebraica<\/strong>&quot;Perch\u00e9 questo piatto \u00e8 tipico del <strong>Tradizione ebraica<\/strong> e persino tipico dei ristoranti che si trovano nel <strong>Ghetto ebraico<\/strong> nel cuore di roma.<\/p>\n<p><strong>carciofi<\/strong> cucinato in questo modo diventa come a <strong>grande rosa<\/strong> e lo sono molto <strong>croccante<\/strong>.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>ingredienti<\/strong> per 4 persone:<\/p>\n<p>8 carciofi<\/p>\n<p>Olio extravergine d&#039;oliva<\/p>\n<p>Succo di limone<\/p>\n<p>sale<\/p>\n<p>Pepe<\/p>\n<p>1 spicchio d&#039;aglio<\/p>\n<p>prezzemolo<\/p>\n<p>origano<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Indicazioni<\/strong>:<\/p>\n<p>Lavare i carciofi e rimuovere le foglie esterne che sono dure, tagliare gli steli lasciando solo 3-4 cm e pulirli anche.<\/p>\n<p>Tagliare, intorno al carciofo, le foglie usando lo spelucchio formando una spirale sopra il carciofo.<\/p>\n<p>Inumidire con limone e immergerli in acqua fredda (in cui \u00e8 stato aggiunto il succo di limone) per circa 30 minuti. Risciacqua i carciofi, apri delicatamente le foglie con le mani e aggiungi il sale.<\/p>\n<p>Versare abbondante olio in una padella, i carciofi dovrebbero quasi galleggiare nell&#039;olio, aggiungere uno spicchio d&#039;aglio.<\/p>\n<p>Coprire e cuocere a fuoco medio per 15 minuti, quindi spegnere il fuoco. Estrarre i carciofi e afferrandoli per lo stelo schiacciato la testa contro un piano per aprire tutte le foglie dei carciofi e andarsene in questa posizione.<\/p>\n<p>Riscalda abbondantemente l&#039;olio in una padella e quando bolle, metti i carciofi a testa in gi\u00f9 per farli rosolare.
